the simplest foods we are just loving

so i might be a little obsessed with food these days - at least i give it a lot of thought.  in my defense, it does take a lot of planning and effort to keep all these people fed! and we are only home together for dinner on friday nights during the week now so i have to be a little more quick to plate than i normally am.

i thought i would share some of the easiest lunches/dinners the kids (and grown-ups) are loving right now...

pesto and tomato sandwiches - toast bread, spread with pesto, add sliced tomatoes, enjoy!

grilled hummus and cheese - put a generous amount of hummus in the middle of a tortilla (we use whole wheat), sprinkle on a little cheese - mozzarella or jack (we use non-dairy 'cheese'), roll up like a burrito and grill.

avocado toast - toast bread, add thin slices of avocado (sort of fan them out), sprinkle with olive oil, lemon juice, red pepper flake and salt and pepper and then eat open faced.

these have become some of my favorite go-tos recently and were things i never would have come up with on my own (these are all from cookbooks).
