they are celebrating summer birthdays this month at school. of course madelyn's day would be in the middle of a very busy work week, on a day when i needed to bring a dish for the moms' group brunch, and that i needed to send a lunch with her to school for 'lunch bunch' (an after school program that i had prepaid and needed to use up before the end of the school year).
since madelyn won't have a party with friends this year, i told her that i would make any kind of birthday snack she wanted. she said that she wanted the "most chocolaty, chocolate cupcakes with strawberry frosting". i told her that i could take care of it and then i took her to pick out special wrappers over the weekend - she picked princess ones with crown toppers.
apparently, you can't just buy strawberry frosting any more. they had pineapple, but not strawberry. so i found a recipe online for 'boil icing'. i was showing it to madelyn and she saw marshmallows on top of the cupcakes in the picture so, of course, she wanted hers to have marshmallows too. she had also picked out some rainbow chips (sort of like m&ms) when we bought the wrappers. i used too many eggs making my brunch items and didn't have the four i needed for the icing, so i halved the recipe. it came out a little runny, but tasted pretty good. overall, i think that the finish product turned out great and, most importantly, madelyn loved them! i think "service" might be her love language. she is always most grateful when i do things for her - wash her clothes, make her cupcakes, etc.
the birthday girl also picked out her outfit for school - dad's old, over sized, blue jersey, teal and green striped capri leggings, white ankle socks, pink glitter shoes, and five different barrettes in her hair. she also got a "happy birthday" sticker at school. she was a very happy girl! love.
